Ingredients You’ll Need
- Two diced and peeled red onions
- Two finely chopped garlic cloves
- 225g of spinach
- 225g of watercress
- Two packs of smoked tofu
- 20 dried cannelloni pasta tubes
- Two cans of chopped tomatoes
- Two teaspoons of dried thyme
- Salt and pepper
- Vegetable oil
- One teaspoon of smoked paprika
- Optional: 75g of a vegan cheese that melts well (Violife cheddar flavour block recommended)
Your Veggie-Packed Cannelloni: Step-By-Step
- Begin by preheating your oven to 180°C. Heat up a large pan over medium firepower. Pour in a splash of oil, and start cooking your diced red onions along with a pinch of salt. After stirring in the garlic and a teaspoon of thyme, transfer the cooked mixture into a large bowl.
- Without turning off the heat, introduce another drizzle of oil into the pan and add watercress. Once the watercress wilts, mix it into the bowl of cooked onion and garlic. Repeat the procedure with spinach.
- In a separate bowl, drain and mash the tofu with a fork. Season it with paprika and salt, stirring to combine.
- Blend the seasoned tofu into the bowl of mixed greens and mix thoroughly. Adjust for any additional seasoning if needed.
- Fill a piping bag (no nozzle needed) with the tofu and greens mixture. Pipe the filling into cannelloni tubes, laying them on an ovenproof dish in a single layer.
- Finally, drench the cannelloni with chopped tomatoes, sprinkle the remaining thyme, and season with black pepper. Optionally, scatter over the grated vegan cheese before baking the cannelloni for roughly 35 minutes. The final visual cue – a visibly bubbling cheese and a hot-filling in the middle. Allow it to rest for a bit before serving a hearty, vegan feast.
